scallion pancakes
2 cups chopped fresh scallions
5 tbls oil
2 tbls sesame oil
3 cups flour
1.5 cups hot water
The dough should not stick to your hand
1) mix flour and got water together. Use spatula at first then mix by hand
2)place the dough in a warm area for at least 30 min.
3) separate the dough into four pieces and use a rolling pin to flatten. More flour can be added if the dough is sticky.
4) brush a little oil and sesame oil on the dough and sprinkle scallions and salt evenly.
5) roll the dough until long. Wrap this piece of dough into a spiral.
6) flatten the spiral with your hands and pan fry over low heat flip when brown.

Uncle Ted makes it to Boston!
Ted Debbie and the kids, Matt, Jessica, and Derrek finally came to see us here in Massachusettes.
We went to Providence on Monday. As we were walking down Eddy street downtown we saw some crazy monsters! There was a store front window full of these nightmarish larger than life foam costumes. Carrot man, broccoli guy, frieky one eyed guy thing... they let us go inside. They showed us how they made these things. It was cool.
On Tuesday we went to a great farm in Northboro. They had several varieties of apples. We did a hay ride and picked apples, posed for some cheesey pictures and ate some apple crisp. I made a delicious apple pie for dinner. Before dinner everyone went candlepin bowling. The Utahns loved it.
Wednesday was Boston with Wendie and Christy. We did not go. I needed to catch up on life.
Thursday we did Newport. What a beautiful day we had. The ocean was gorgeous. We did the cliff walk. Jessica hurt her ankle. I about had a heart attack every time Jacob got within 15 feet of the edge... it was good times.
Friday I drove them to the airport and on the way home Adin started crying so I took him to the doctor. He has an ear infection. Poor little guy.
We are so happy to have had the Ted Parry family visit us. Come back soon!
